Ingredients

  • 2 cups 16 oz San Pellegrino Sparkling Natural Mineral Water, chilled (or another plain natural sparkling water, such as Perrier)
  • 2 ripe mangoes peeled and pitted
  • 1 whole fresh pineapple peeled and cored
  • 3 tablespoons raw honey or pure cane sugar
  • 3 tablespoons fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 1 cup ice plus more for serving
  • Dried mango strips and dehydrated pineapple rings for garnish
  • Fresh mint leaves optional

Method

  1. Blend one mango with the honey; simmer in a small saucepan 5–7 minutes until slightly thickened. Cool completely.
  2. Juice about two-thirds of the pineapple; set the rest aside as chunks and freeze a portion for ice.
  3. Blend the second mango into puree; dice a small handful for texture.
  4. In your pitcher, combine the cooled reduction, pineapple juice, mango puree, lime juice, and lemon juice. Stir well.
  5. Add the reserved mango and pineapple chunks; refrigerate at least 40 minutes.
  6. Fill the pitcher or glasses with ice; pour chilled sparkling water in slowly along the side of the glass.
  7. Stir gently, once.
  8. Garnish with dried mango and pineapple on a skewer or the rim; add mint; serve right away.
